(Ingredients for 4 people)

Preparation time – 10 Minutes
• One packet of digestives, oat cakes, wafers or your favourite biscuits
• 200g fresh raspberries
• 250g Galbani Santa Lucia® Mascarpone Light
Whip the Mascarpone and spoon onto your chosen biscuit. Then place raspberries on top of the mascarpone, add another biscuit and repeat. Top off with a plain biscuit.
