Born on a picturesque rooftop in Barcelona, Rooftop Smokehouse began as a creative experiment among friends, an empty wine cask, and a shared love of food.

Today, it has evolved into one of Spain’s most exciting producers, crafting an outstanding range of smoked products that combine tradition, innovation, and a deep respect for ingredients.  The delicate mastery of the curing and smoking is exceptional – this is truly a world-class range of ingredients.

Highlights of the Mevalco range include:

  • Smoked Butter – silky, aromatic and transformative, adding depth to the simplest dishes.
  • Lightly Smoked Pork Belly (Chicharrón) – rich, savoury and perfect as a tapas bite or indulgent sandwich filling.
  • Smoked Coquelets – tender, delicately flavoured and ideal for salads or sharing plates.
  • Smoked Pastrami – a stunning pastrami, which uses British Black Angus beef, cures it, and then hot-smokes it to produce a rich, traditional pastrami. After smoking, the pastrami is typically steamed to achieve a tender, juicy texture, ready to be sliced and served on a sourdough with traditional accompaniments like pickles, mustard, and sauerkraut.

Txuleton from Asturias – Spain’s iconic steak

Mevalco is also delighted to be importing the very best Txuleton it has ever sourced, from long-standing supplier Vacuum. Txuleton – the Spanish name for large, bone-in rib steaks – is one of Spain’s most iconic foods, particularly renowned in Asturias, close to Mevalco Managing Director David Menéndez’s home.

Expertly trimmed and beautifully consistent, these steaks are taken from mature cows, prized for their depth of flavour and exceptional marbling. They offer UK chefs a point of real difference on the menu – a chance to serve beef of a higher quality and distinctive provenance than standard British steak. Sales are strong, but supply is even stronger, giving chefs a rare opportunity to secure this outstanding product.

La Chipotlera – complex, slow-crafted sauces

Completing the trio is La Chipotlera, a producer whose philosophy of patient, honest food production mirrors that of Mevalco. Founder Luis grows his own chilli peppers and uses them to create an extraordinary range of sauces and salsas – some of which take up to three years to mature, not unlike Iberico ham.
