Foodservice wholesaler Booker has turned up the heat with the launch of Chicken Kitchen, a one-stop proposition bringing together fresh, frozen and frozen cooked chicken with the buns, sauces, sides and packaging operators need to build a profitable chicken menu.
The full Chicken Kitchen food proposition spotlights just under 50 lines, which includes 27 chicken products and a selection of other products including sauces and breads. Booker’s product development team has reworked the coated chicken range with crispier, crunchier Homestyle coatings and much-improved flavours. Hot & Spicy now brings serious heat, Southern Fried has been rebalanced, and long-awaited new flavours include Buttermilk and Salt & Pepper. The coated lines can also be hot-held for 30 minutes after frying, a big plus for delivery and busy service.
At the heart of the burger offer are Chef’s Menu 125g Homestyle fillets in Breaded, Buttermilk, Southern Fried and Hot & Spicy, all made for a great chicken burger. They sit alongside new Katsu Breaded Chicken Fillets, Breaded Chicken Schnitzels and Chef’s Essentials Battered Chicken Fillets, plus improved American Style Chicken Fillets.
For loaded fries, wraps and salads, new Homestyle Chicken Strips come in Breaded, Buttermilk and Hot & Spicy, alongside improved Small Southern Fried and Small Crispy Chicken Fillet Strips. New Salt & Pepper and Salt & Chilli Shredded Chicken bring takeaway-style flavour to loaded fries, with Salt & Pepper ready in just two minutes in the fryer.
Wing lovers are well catered for too. New Homestyle Breaded Chicken Wings sit alongside gluten-free BBQ and Hot & Spicy Glazed Chicken Wings, which combine an even mix of mid and prime wings and can be oven cooked in 20 minutes. New Homestyle Breaded Boneless Wings and improved Homestyle Hot & Spicy Boneless Wings are made for sharing platters, bar food and delivery. For light bites and younger diners, there are Chef’s Essentials Southern Fried Chicken Pops and Battered Chicken Nuggets, plus Chef’s Menu Crispy Chicken Bites.
Chicken Kitchen covers everything that goes with the chicken. New Chef’s Menu Scotch Bonnet Hot Honey and Mango Habanero sauces join Chef’s Menu favourites such as Buttermilk Ranch, Korean Style BBQ, Chipotle and Sriracha, alongside branded names including Frank’s RedHot and Heinz, Heinz dip pots for takeaway orders and Chef’s Larder dill sliced gherkins for a sharp crunch in every burger.
Operators can complete the build with new Chef’s Premium Potato Buns and Chef’s Menu Seeded, Glazed and Slider Buns, new Chef’s Menu Monterey Jack Slices and Cheese Burger Slices made with 60 per cent cheddar. Sides such as Chef’s Premium Super Crispy Fries and Chef’s Menu Waffle Fries and Potato Pops are also available within the range. For kitchens that coat their own, Chicken Train Southern Fry and Double Hot breaders and marinade are also available.
In the fresh range, Chef’s Menu calibrated chicken breast fillets keep portions consistent and reduce waste, with 110-130g fillets sized for a 4-inch bun and 150-170g fillets for a 5-inch bun. Chef’s Essentials Chicken Breast Fillets deliver everyday value, and Chef’s Essentials Oyster Cut Chicken Thighs bring value and flavour. Chef’s Menu Chicken Thigh Mince, Diced Chicken Thigh Meat and calibrated Mid and Prime Chicken Wings cover everything from kebabs and burgers to wraps and wings.
A frozen Chef’s Essentials range of mid and prime wings, 2 and 3 joint wings, drumsticks, oyster cut thighs and leg quarters adds convenience and helps reduce waste.
Packaging is covered with small, medium and large chicken boxes and CaterPro kraft burger boxes, sauce pots and street food bowls, while CleanPro hygiene essentials help keep the kitchen clean. Lincat heated displays, hot holding units and fryers are also available through Booker Marketplace.
With chicken continuing to outpace all other proteins, Meaningful Vision reports a 10.5% year-on-year jump in restaurant footfall and Lumina Intelligence tracks it as a standout growth trend across UK dining. Chicken Kitchen gives operators the quality, choice and flavour to capitalise on that demand across pubs, bars, street food vendors and takeaways alike.
Whether helping a fast-food outlet run a successful chicken business or enabling a pub team to introduce profitable chicken occasions to the menu, the new Chicken Kitchen range provides guaranteed consistency, portion control, and strong profit margins.
Nev Irani, Foodservice Managing Director at Booker, says: “Chicken presents a real opportunity for foodservice operators, and our new and improved chicken range will help them navigate the options, flavours and formats to create successful dishes and menu options to suit this dynamic market.
“We’ve gone back to the kitchen on our coated chicken to give operators a product their customers will notice, with a crunch that lasts, flavours that deliver and a 30-minute hot hold that keeps it at its best from fryer to front door. Pair that with our new sauces, buns and cheeses, and operators have everything they need to build a standout chicken menu.
“Chicken’s popularity is driven by its affordable price point, an influx of US high street chains, viral trends, delivery-friendly formats and the fact it lends itself to so many world flavours.
“The range reinforces our commitment to being a single-source partner, supplying versatile food formats alongside the accompanying buns, sides, sauces and condiments, takeaway packaging, and hygiene essentials needed to run an efficient kitchen.
“By delivering an easy-to-use range that meets market expectations of great choice, flavour, and consistent quality at competitive prices, we aim to empower foodservice operators, publicans, and restaurateurs to serve chicken confidently and grow their business sustainably.”
