Chef Steven Wilson, currently Executive Chef at One Hundred Shoreditch, creates a delicious pork belly meal with clams and vegetables – using the three newly released sauces to showcase their versatility

Lee Kum Kee – the authentic Chinese sauce brand – has just released three new cooking sauces into foodservice, designed to allow chefs of all abilities to explore their culinary skills and add magic to their dishes, one spoonful at a time.

The new Vegetarian Stir-Fry Sauce (with Shiitake Mushroom), Chinese Style Honey BBQ Marinade (Char Siu Sauce) and Chow Mein Stir-Fry Sauce are convenience driven sauces pre-mixed for mainstream catering use. These sauces aim to accelerate culinary exploration by transforming simple dishes into mouth-watering creations.

“I am inspired by the versatility of the Lee Kum Kee sauces that can elevate the flavour in dishes without over powering them. You can either use them as they come or as a base for another sauce you’re going to make”, said Chef Steven Wilson, currently Executive Chef at One Hundred Shoreditch who Lee Kum Kee is collaborating with on recipe development to launch the three new sauces.

Whether looking to create authentic Chinese style dishes or fusion cuisines with a twist, Lee Kum Kee makes it easy with the three innovative product lines. Chef Steven adds, “I’ve chosen quite a conventional British cut of meat, cooked in a conventional way, just marinated with using the Char Siu marinade to add flavour and the stickiness that you want from a pork belly. The earthiness of the wild mushrooms and clamps goes really well with the vegetarian stir-fry sauce, adding a bit of the umami flavour. With the stir fry, I added Chow Mein Sauce to add that little depth of flavour to bring it all together with the purple sprouting broccoli and aubergines.”

“The biggest plus point I see is the convenience side of using these sauces. Instead of taking a day out of the chef on the rota making these sauces from scratch, I can buy them in, and they potentially bag as much flavour as the ones we were making inhouse. It saves time, is super-efficient and has got bags of flavour. Given the current shortage of chefs in the kitchen, you need to be able to buy sauces that are ready to go and big on flavour.”

  • The Vegetarian Stir-Fry Sauce (with Shiitake Mushroom) is a multipurpose rich seasoning sauce made with shiitake mushrooms which is gluten free and also suitable for vegans. Its medium-thick brown glossy nature makes it the perfect vegan alternative to the famous Lee Kum Kee Oyster Sauce, without losing the umami taste. It’s ideal for seasoning, marinating, adding to sauce mixes, revamping stir-fry dishes or creating vegetarian stocks.
  • The Chinese Style Honey BBQ Marinade is a honey-sweet and savoury sauce hailed to be secret to the authentic Chinese barbequed pork, known as “Char Siu.” It’s balanced sweetness, glossy finish, and sticky texture, along with aroma from spices, makes it ideal for marinating meat, seasoning stir-fries, and glazing roasts. A rich and tasty sauce, it is suitable for vegetarians, bursting with flavour and is loved by all age groups.
  • Lastly, the Chow Mein Stir-Fry Sauce (Char Siu Sauce) is a rich and flavoursome sauce made with soy sauce, soybean paste, sesame, and garlic. It carries the perfect balance of sweet and savoury for seasoning any stir-fry dish, whether its noodles or vegetable dishes.

The sauces are rich and concentrated in nature, which means a little goes a long way. They contain approximately 50-100 portions per easy-to-handle plastic bottle, providing cost-efficiency and more margin for chefs.
