This Summer, Brindisa Spanish Foods will bring Northern Spain’s favourite hot sauce, Salsa Bastarda, to the UK for the first time. Based on a centuries old recipe used by Cantabrian fishermen, the spicy sauces are made from a secret blend of peppers and are available in both a green and red variety.
With a fresh, slightly sharp aroma, the flavour of the milder green sauce is fruity with touches of spice and a lingering, moderately hot finish making it the perfect accompaniment to fish, seafood or vegetarian dishes. With its full, rounded flavour, notes of ripe tomato and a late arriving heat, the Bastarda Red Hot Sauce will give a boost to grilled meats, add spice to marinades, dips, and stews or give a kick to a Bloody Mary.
‘Traditionally, Cantabrian fishermen were travelling thousands of miles with very basic equipment and boats by modern standards. Making the sauce was something of a ritual for the sailors but sadly, fell out of use over time.
